Barbecued Smoked Sausage and Lima Beans

Here is a one-skillet recipe with just a few ingredients that will take your camping experience to a whole new level! It will take just a couple of minutes of prep time in your kitchen before you leave for your trip, but it is well worth the effort!

2 teaspoons olive oil
4 5-inch turkey or chicken sausages
1 medium onion, chopped (about 1 cup)
2 10-oz packages frozen lima beans (throw them in the drink cooler and they will keep fine til dinner)
1 14-oz can stewed tomatoes
1/4 cup brown sugar
1/4 cup cider vinegar
1 tsp dry mustard
1 tsp chili powder
1/2 tsp ground ginger
1/4 tsp salt

1. In a heavy, non-stick 9-inch skillet, heat the oil. Pierce each sausage prior to placing in the skillet. Add the onion and then cover. Stir the onion and turn the sausage occasionally, cooking until the onion just start to brown (about 4 minutes).

2. Add the lima beans, tomatoes, brown sugar, vinegar, mustard, chili powder, ginger and salt. Cover and bring to a boil. Reduce heat and cook, stirring occasionally, until the lima beans are tender (about 10-12 minutes). Serve
